July 4th is here!
Celebrations and gatherings are a wonderful way to spend the holiday weekend. However, this can be a challenge for those of us with food sensitivities or those who are trying to stick to a clean and healthy diet. Don’t dread the snack table! Check out some of Anna’s go to recipes for summer snacks that you can bring to any event.
Quick And Easy Mediterranean Veggie Kabobs:
Start with some vegetables of your choice cut into bite sized pieces.
Some options are mushrooms, onions, zucchini, squash, tomatoes, bell pepper, Brussel sprouts, broccoli, or shallots. Mix and match to create your favorite combination.
Make a marinade: combine olive oil, lemon juice, fresh garlic, salt, pepper, and oregano all measured to taste. Marinate for a few minutes, overnight, or even just drizzle on right before cooking.
Put veggies on skewers and cook in advance or throw them on the grill right before serving. These skewers are great hot or cold for a refreshing healthy snack.
Heart Healthy Chunky Bean Dip:
1 can of black beans, drained and rinsed
1 bell pepper chopped finely
1 clove garlic minced
½ onion chopped finely
Handful (or lots) of cilantro chopped
3 TBSP olive oil
2 tsp Dijon mustard
The juice of 1 lime
Salt and pepper to taste
Mix all ingredients and store in the fridge until ready to serve.
Serve with your favorite tortilla chips or veggies.
Coconut Chia Pudding with Strawberries and Blueberries:
1 can of coconut cream
3 TBSP of chia seeds
2 TBSP maple syrup
½ tsp vanilla extract
Pinch of flakey sea salt
Mix all ingredients and put in the fridge overnight. Stir occasionally to spread the chia seeds evenly.
Top with strawberries and blueberries.
