Eating with the seasons is so important! It helps us mentally mark seasonal changes and time passing, keeps flavors interesting and food boredom to a minimum, and it allows us to tune in to the world around us by eating fruits and veg while they are in season.
With all of that being said, here are a few of my favorite fall recipes that I find myself looking forward to each year.
The Varying Vegetable Soup:
Base:
1 onion chopped
2 medium or 1 large carrot chopped
3 stalks of celery chopped
When cooked in a fat (coconut oil, olive oil, butter) we create a mirepoix which is the base in many soups, stews, sauces and stocks.
Cook over medium heat until onions are soft and translucent.
Next add any other veggies and herbs you like, some options are:
Chopped mushrooms
Minced garlic
Potato
Turnips
Zucchini or squash
Rosemary
Thyme
Salt and pepper to taste
All veggies should be cut into fairly small pieces to decrease cooking time.
Sautee all veggies for a few minutes then add your broth of choice. The amount of broth you need will depend on how large of a batch of soup you are making,
Bring to a boil then simmer until veggies are tender, next you can either leave your soup chunky or you can immersion blend to create a smooth and silky vegetable soup.
Roasted Beets:
Clean and slice the beets, thin slices allows for quicker cook time
Mix in a bowl with olive oil and salt. Rosemary is delicious as well.
Put on a foil lined baking sheet and roast for about 30 minutes at 425 degrees until cooked through.
Put the beets in a bowl and drizzle with raspberry balsamic vinegar and salt. You can add a bit more olive oil if desired. Goat cheese mixed with the beets is delicious as well. Serve warm or cold.
Pumpkin pie overnight oats:
(makes two servings)
½ cup plain or vanilla greek yogurt or coconut yogurt
½ cup milk of choice
½ cup pumpkin puree
1 TSP vanilla extract1TSP pumpkin pie spice
1 cup rolled oats
0-2 TBS maple syrup or honey
Mix all wet ingredients together, then add dry ingredients, add maple syrup or honey to taste.
Refrigerate overnight.
